With #backtowork trending on Twitter all day, it’s time to confront the ugly truth: holidays are over. The month of over-indulgence has flown by in a haze of Prosecco and Quality Street and we’re left in a daze of post-festive gloom.
However, it’s not all bad. January is the time for comitting to new resolutions and getting your body back in shape. You can kick that sluggish feeling with these genius salads in a jar. Not only can you make your entire week’s worth of lunch in one go, you’ll be saving precious pennies instead of panic buying lunch on a hungry stomach. Resist the urge to fill your jar with cheese and opt for fresh fruit and vegetables instead. You’ll thank yourself later.
Having said that, there’s nothing worse than finishing your healthy lunch at 1pm and by 2pm you’re ravenous. To make sure you stay full, choose grains, pasta or meat. Pro tip: add the meat, cheese and softer vegetables (like avocado) on the day so they don’t discolour.
