Christmas snacks. Yummy! Urban team playa Aurelia bakes up a storm with her traditional French lemon shortbreads. They’re so damn tasty (we did indulge in a taste or two). Sharing is caring, so here’s how to bake a batch of your own! Over to you Aurelia…
Sablés au citron (Lemon Shortbreads)
What you will need for about 20 biscuits:
150 g of salted butter (best is Sel de Guerande butter, because it uses salt crystals)
20ml of olive oil
200 g of sugar (any sugar)
2 eggs (non caged hen please)
400 g of all purpose flour (do not use self raising)
3 tablespoons juice from lemon or lime
Zest of 1 lemon (be generous)
Preparation time: 5 minutes
Cooking time: 15 minutes
Waiting: 20 min (you can do the dishes in the meantime)
Total Time: 40 min
Let the butter soften at room temperature or put it in the microwave for 20 seconds (if you are impatient but make sure the butter does not melt).
Beat butter with sugar and olive oil until the mixture whitens.
Add the beaten egg and mix well.
Sift the flour over the preparation.
Add the lemon / lime juice and lemon zest.
Mix gently to obtain firm dough. Best is to mix with your squeaky clean hands.
Leave to rest for about 20 minutes (if you are really impatient, letting the dough rest only infuses the flavour of the olive and lemon)
Preheat the oven at 180 degrees (please make sure the oven does not preheat too much 5-10mn is all that is needed)
Divide the dough in small balls or roll the dough and cut shapes with cookie cutters.
Bake for about 15 minutes, depending on oven, until the shortbread is golden brown.
Decorate the cookies if you want but they are also delicious just the way they are.
Pack the cookies in a cookie jar and bring them to your friends, family, colleagues. Remember Christmas is about spending time with the ones you love.
